Matt's Wild Rice Soup for Chardonnay Lovers


 

Ingredients:

6 Tbsp butter

1/4 c minced onion

1/2 c flour

3 c chicken stock

2 c cooked wild rice

1/3 c minced ham (can be purchased already in very small cubes)

1/2 c grated carrots

3 Tbsp slivered almonds

1c half&half

5 Tbsp dry sherry

sniped parsley, chives, or green onion

Saute onion in butter until translucent and blend in flour.  Work in flour to make a roux, and cook for 3 mins, stirring constantly.  Gradually add stock and stir until smooth and thickened.  Bring to a boil for one minute and then stir in cooked wild rice, ham, carrots, and almonds.  Simmer for 5 minutes and blend in half&half and sherry.  Salt and peper to taste.  Garnish with parsley, chives or green onion.
