Cornflake Cookies

Just the right nibble to go along with the soup of your choice!

1 cup unsalted butter
1 cup sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
1 and 1/2 cups flour
2 cups cornflakes
pinch of salt

Preheat oven to 350, place baking rack centered in oven

Cream together butter and sugar for a couple of minutes.  Add soda, tartar, and flour to mix. Stir until blended.

Add cornflakes and pinch of salt.  Gently mix until cornflakes are eenly distributed throughout the cookie batter.

Drop  1 teaspoon of batter onto cookie sheet.  Gently flatten top of cookie with the back of a fork.

Bake 10-14 minutes, let sit for a couple of minutes before moving to cool rack.

If you use parchment paper, then you can move the whole sheet to the rack to cool.
